Pisco Sour

Pisco, lemon and sugar syrup with a soft egg-white foam.

What you need

Quantities from our original recipe. Batch yields are noted where specified.

  • 5 cl Pisco
  • 3 cl lemon juice
  • 2 cl sugar syrup
  • 2 dashes Angostura Bitter
  • 1 egg white
  • Cocktail glass
  • Jigger
  • Cocktail shaker
  • ice cubes
  • Good spirits!
  • Guests!

How to make it

  1. Measure the pisco, lemon juice, sugar syrup and egg white into a shaker.
  2. Shake without ice to build the foam.
  3. Add ice and shake again until very cold.
  4. Strain into a cocktail glass and finish with Angostura bitters.
